Dried in the shade and then they are put in a giant wok where they are gradually slowly rolled around while being fried and till the leaves become little pearls of green tea. This process gives them a toasty flavour that is slightly nutty. Scented with jasmine they have a sweet smooth flavour with a hint of flower and earthiness. This tea requires a lot time and work to make and is unique.
